Flavours above the clouds: Chiang Rai and Mae Salong (Thailand)
Over the years, I’ve returned several times to Chiang Rai and to Mae Salong, drawn by the extraordinary richness of their food culture in northern Thailand. Mae Salong, in particular, is a small mountain village that seems to unfold along a single street — yet behind each door lies a world of craftsmanship.
From handmade doughs and noodles to intricate fermented preparations, local artisans have been quietly producing food here every day, often for decades. It’s this dedication, this continuity of knowledge and flavor, that keeps bringing us back.
We come to document, to speak with the makers, and to taste. Hidden in the mountains, Mae Salong feels both remote and deeply alive, a place where culinary heritage is practiced as part of daily life.
